Just a small tip... hold the knife at the correct angle, upside down (so the spine is towards you) and move the hone, so you are polishing away from you... Much better control and capable of sharpening large blades. Also, a plastic container with some water in is enough to remove the slurry. I prefere to keep it on the hone, as it starts to work as a grinding paste. Happy sharpening!
