In the North of Argentina people also make bread in this meaner. Make large fire is made with wood once the wood is totally burned, the ashes are suppose to be white and the burned wood red, no smoke or partially burned wood, It can be toxic. Once the fire is ready, a hole is made in the middle of the fire ( like a nest). In the hole, prepared using the hot white ashes only , place the bread to be cook, cover it with a thick layer of hot ashes, leave it in there undisturbed until done.
@Cabiira1 this technique is real old from the period , when there no instruments were available, in this age they can use atleast alu foil to cover the bread, then they have bread which do not taste like sand in your mouth.ok the dust is sterelized through the heat, but micro stones are feelable under the teeth.Well the whole seen looks very romantic.
