  • The fish was captured less than 1 hour before. The cook removes the skin and slices it in smaller parts. If the fish appears to be stiff, that is not due to freezing but to the natural reaction of bodies shortly after the death occurs. A fresh fish gets stiff shortly after capture, than again softens when the muscle contractions are over.
