i agree. the roles she takes are a stereotype, but one that transcends ethnicity.

the almost pretty girl who resents not being the prettiest girl in the room can become obsessed with being the sexual center of attention. so much so, that she doesn't recept that men really prefer her and her ego stroking abilities - she doesn't need a skilled lover - the attention itself gets her hot and she's eager to please.

I am from Spain and I don't think that the roles she takes are racist insults to spanish women. You have to understand that it is really difficult being spanish and succed in Hollywood, of course, most of the rols she takes will be as a latin woman, there are a lot of stereotypes.
