The high pitch noise is called compressor surge, basically when the throttle is closed for a gear change, excess pressure in the intake system is forced back out through the turbo compressor, causing this noise.
That is a kick ass video. I always wanted to get a good look under the hood, dash and the radiator system in the "trunk/boot". Thanks for that. It's a dream of mine to take an S1 for a rip.
