The first ChefTips recipe I've actually gone out and made! I had a hankering for chili today, but I'm trying to eat healthy, and this hit the spot! I even managed to go without the cheese and sour cream (it was tough!) A lot of flavor, and I didn't miss the beef at all! Thanks Jason!

I just have a question. In the final, simmering stage, you never mention the amount of heat for it. Lo? Medium Low?
Also, I noticed you used red chili powder. Nice choice! Now, if you truly want to make it hot enough to call your local fire dept. here are a couple of tricks i learned, of all places, in chem lab back at school.
When it's about to simmer, add half a tip of a teaspoon of sugar. Not one grain more, and equal amount of finely ground white pepper. You'll notice the difference.

@RollandB Seasoning a bit during the early stages is okay, so long as you don't over season, as the flavors develop during the cooking process, especially long cooking times and as the sauce reduces, the flavors will concentrate. I always season my mire poix, or sofrito, at the beginning and then season a bit as a new layer goes into the pot. And always check for seasoning toward the end and adjust seasoning as needed.
As long as they wash their hands first, you'll be alright. Besides, I doubt most fast food chains are making their chili from scratch. Probably comes in frozen and they reheat it...
@packleader1215 wendy's uses pattie's from the grill that are just about over cook's. they sit in a pan under the grill,when the pan is full they go 2 the kitchen and get wash'd off,place'd in a new pan cover'd with plastic wrap placed in the cooler. when needed for chili the pan or pans are placed of the stove,filld with water the amount of meat neededand boild bout 5 min's drain'd choped. then the mix is added. i workd for wendy's almost 5 yrs.before i found a better line of work.

@tattva16 It was a New Mexico chili powder. You can use any type of medium-heat chili powder you like, but you probably wouldn't want to use 2 tablespoons of chili de arbol or cayenne.
hahahaa "it's kind of dirty" yeah that's always my thing with the chopped meat, I wash my hands immediately after! Looks like a good chili recipe. Also chili is nice and cheap, makes great leftovers. Great idea for the eggs too! I will have to try that!

I sometimes use turkey in place of beef in my chili. Once you have all the spices in the pot the turkey taste is pretty masked.
