    Hello.

    You could, but paprika is usually used for color and not so much for flavor. I don't think it will do much for the color in this recipe.

    Rapeseed oil has been used as fuel and as a pesticide: it is a toxic substance.

    Canola oil isn’t even a natural substance. It was genetically engineered. And we don’t have enough information on genetically modified organisms to say whether they are safe or not.

    Rapeseed oil (which is what canola oil comes from and used to be called), contains high quantities of both erucic acid and gluconsinolates, which are harmful to humans and livestock, respectively.

    btw. what brand is that dutch oven? It looks like it doesn't have a plastic knob on top

  • I sometimes use turkey in place of beef in my chili. Once you have all the spices in the pot the turkey taste is pretty masked.

  • Hey Chef Jason. Just wondering why you use canola oil in a lot of your recipes to sauté? Is it healthier than regular olive or vegetable oil? Or does it simply taste better?

    Canola has a good flavor and holds up to the heat for this type of dish. I use olive oil in other recipes too.

  • @Zaviex I would start with an additional 20-30 minutes with the lid off. However, be sure to stir and check it often so it doesn't burn on the bottom.

  • I just have a question. In the final, simmering stage, you never mention the amount of heat for it. Lo? Medium Low?

    Also, I noticed you used red chili powder. Nice choice! Now, if you truly want to make it hot enough to call your local fire dept. here are a couple of tricks i learned, of all places, in chem lab back at school.

    When it's about to simmer, add half a tip of a teaspoon of sugar. Not one grain more, and equal amount of finely ground white pepper. You'll notice the difference.

  • @Zaviex @bulldogthebigdog The main ingredients in chili con carne are meat and chili (basically translated to chili peppers with meat). "Original" chili con carne could very well have been made without beans, but who cares, really? Beans have been added to the meal for quite some time and works well... even though I prefer mine without. Chili Appreciation Society International has forbidden beans - take that how you will.

  • I'm really new at this cooking thing, but does seasoning with s&p after simmering make a huge difference, or is it ok if I season while I stir in the other ingredients?

  • @RollandB Seasoning a bit during the early stages is okay, so long as you don't over season, as the flavors develop during the cooking process, especially long cooking times and as the sauce reduces, the flavors will concentrate. I always season my mire poix, or sofrito, at the beginning and then season a bit as a new layer goes into the pot. And always check for seasoning toward the end and adjust seasoning as needed.

  • @packleader1215 wendy's uses pattie's from the grill that are just about over cook's. they sit in a pan under the grill,when the pan is full they go 2 the kitchen and get wash'd off,place'd in a new pan cover'd with plastic wrap placed in the cooler. when needed for chili the pan or pans are placed of the stove,filld with water the amount of meat neededand boild bout 5 min's drain'd choped. then the mix is added. i workd for wendy's almost 5 yrs.before i found a better line of work.

  • @tattva16 It was a New Mexico chili powder. You can use any type of medium-heat chili powder you like, but you probably wouldn't want to use 2 tablespoons of chili de arbol or cayenne.

  • hahahaa "it's kind of dirty" yeah that's always my thing with the chopped meat, I wash my hands immediately after! Looks like a good chili recipe. Also chili is nice and cheap, makes great leftovers. Great idea for the eggs too! I will have to try that!
