Great vid. You might want to try briefly reversing the helm just as the boom is about to gybe over. I think you're inclined to lob the boat in to leeward due to excess centrifugal force, as the bow rounds up to windward though many degrees in a short period of time. Though if you're too heavy on the reverse helm you'll lob it into windward instead...
