xxremix, thanks for your suggestion. I've used applesauce in substitution for butter in other recipes. However, we decided to use butter in this one as it acts as a tenderizer in the application which counteracts the effect of the rice flour.

this probably sounds silly, but have you tried substituting a little bit of the butter with anything else?
your recipe sounds great, but 1 cup of butter sounds like a lot to me :P
