Oh yeah! Adzuki beans wrapped into mochi skin, daifuku, is the tops! I love that stuff. Making it though, can be a hassle (as well as a cause for many burns!). I also really like the Chinese applications too, like moon cakes and baozi. IT really is a versatile ingredient that can be used for sweet and savory type dishes. When making an I find it really helps with the texture to mash it up as fine as possible. Otherwise the skins make the paste feel gritty in the mouth.
awesome work! You should really put all these recpies online or at east in a easy to follow text. Id love to recreate many of these more complex foods you serve (ie mole, this red bean paste) Suggestion for wtf: cannabis, or hemp seeds. Its kinda controversial but I feel its widely misunderstood by many. ps Im soo excited for the mochi episode!!! Mmmm WTF!
I'm Japanese. As an example, I have been cooking this way in my home.
But this is not "An" or "Anko" paste. This is way of "Zenzai".
I think be use the raw brown sugar better than granulated sugar.
Thereby become natural taste.
About the amount of sugar, It as you wish.
And when you put the water, please put a little bit many water.
And discard the boiled water is only once enough.
Because, Will be compromised original flavor of beans with too much boiled.
