You mentioned at the end that fifths are not too common - you're right and all, but - You find them in pivotal sections of works. They are often found as a culminating device. That makes them even more important to practice. =).
You find a lot of Fifths in Bach's Solo Violin music - and that alone makes them essential.
Aye, and I know that fifths appear in plenty of hard pieces. There are some fifths at the end of Paganini's 24th Caprice that can be major nose thumbers.

Yes, when possible, I pick the finger up and move it to the next string.
