Kha=galangal
Kai= chicken
So, when watching some clip telling using 'ginger', it surprised me a lot. Galangal is for this dish only not ginger. The taste would be dramatic different.
But if you like to make it fusion food, it's alright. But I may name the dish 'Tom Khing Kai'. Khing means Ginger.
@durgaaa It's very different in its smell. Sorry I can't explain it more than this to make you touch how different it is.In many Thai curry and thai dishes, we use palm sugar and never put cane sugar to avoide ruining the real taste of them.
