  • @mari51287 when you use canned pumpkin, there is no need for eggs or oil, the pumpkin works as a substitute.

  • @TaTeRoxx Yes it is possible, I don't know if you've heard of "hungry girl" it's a woman who shows people how to make healthier versions of things. She showed that all you need is the cake mix and 1 canned pumpkin, it takes time to mix it well enough to turn nice and gooey but it does work. No need for water.

    I have a few questions though.

    Why no oil or eggs?

    & are these a heavier/heartier muffin, or a fluffly light pumpkin?

  • they are light and fluffy :-) they don't stay really good after about 2 days though. they don't hold up, so eat em fast :-)

  • i guess it's cause theres nothing but the dry mix, water and fat free pureed pumpkin? my mom always touts them as being low fat. i just tout them as being freakin delicious! ;-)

  • Video is awesome and cupcakes sounds super nummy, but... I want to confirm. At what stage do you add the pumpkin? The vid shows dry mix then water but I assume the pumpkin goes in between the two?

  • lol Ya caught me! When I made my second batch today I realized that I hadn't shown you where to add in the pumpkin. The first picture of orange goop is when you add in the pumpkin :-)

  • That's what I figured based on the color and the empty can but I just wanted to make sure. I'm not always the best cook! *chuckles*

  • cinnamon chips tend to only be in the stores at holiday time - thanksgiving till xmas - stock up if you like em! :-)

  • I've been digging out my pumpkin recipes, as it gets closer to Thanksgiving, I will do a slew of them, I am sure. The girls in the office usually drool, knowing it is time for me to be bringing in things for them to 'try'.

  • That was straightforward enough that I might actually be able to do it. (I used to be quite the cook but I've moved into a tiny apartment with an even tinier kitchen.)

  • THANK YOU txnrobin! it really is! it's good with chocolate cake mix too. just don't try it with white cake mix, it's not nearly as good. even if you add in pumpkin pie spice.
