i made coconut kefir from a young coconut, the water was fresh and sweet. i mixed water kefir grains and the water, and let it sit for 48 hours. this morning it was bubbly and fermented but it tasted awful. did i ferment too long? i tasted the water before so i know it was good.
I'm a big fan of Natasha but I have to point out that she is 100% mistaken about pasteurized yogurt. The reason that you can use a pasteurized yogurt product as a starter is that the milk is pasteurized BEFORE the starter is added and the yogurt incubates. The milk is heated to 180 degrees and then cooled to around 110 and THEN the starter is added and the yogurt is kept at around 110 while it incubates. Milk WILL NOT become yogurt if left to ferment without a starter.
pasteurized yogurt means the milk was pasteurized not the yogurt. milk will most likely go bad without a starter. but regular yogurt made of pasteurized milk still has millions of probiotic bacteria in it. so its still a living product in a way although not optimal.

Yep I'm the dip that asked the question about why use kefir grains if it will do it out on the counter, and yes I had them and use them. stupid question but it just hit me one day when I was switching the kefir grains out and taking my daily dose. lol I appreciate your answer and I got more information that I didn't know as well. I use all kinds of recycled glass ware. Interesting fact about the pasteurized yogurt. Don't use pasteurized anything so really does not apply to me plus I am vegan.
Interested in trying the fermented coconut water just not sure if I can do it myself.

That's really good information, Natasha. I'm always looking for additional ways to help my skin. I regularly use coconut water.

Can you just keep the water in the coconut and put it in a dark area. Will fermenting it that way be okay?
