  • I have been roasting my veggies in a fry pan so roasting in the oven is a good idea, I will try. You get the bulk of the heat from the jalapeno seeds so leave them in if you want more heat. Serrano peppers are really good and add lots of heat and what I like is that the heat doesn't hang around for a half-hour like jalapenos. Just a thought. I'll send you the bill for my new monitor... I ate mine while the salsa was on screen!!! :-D Cheers from Texas

    Your question reminds me of eating with a friend one day, I told him the hot sauce was not all that hot, he tried some on his food and practically spit his food out.

    Spicy to some is terribly hot to others.

    I like spicy and I consider this medium hot, if someone is sensitive to spicy, I would tell them hot.

    My oven or cooker has a place that heats up and you can bake in it.

    It is electric with coils that heat up.

    The oven also has electric coils on the top and you put your food up close to those coils and we call it broiling under the broiler.

    I know we call the same things different names and hope that I explained it, if not ask again.

  • Baking does intensify the flavor. I like to bake tomato together with fresh thyme, then remove the thyme after baking.

  • Its nearly spring, and I already have onions, garlic, lettuce, swiss chard, cilantro, dill, shallots and spinach out in the garden. :D But this summer, when the tomatoes and peppers are doing their thing...I CANT WAIT to try this!     I double the recipe and then put in extra lime juice (cider vinegar is fine too) and put it up in mason jars.

  • My secret ingredient(well maybe not so secret) to any salsa is red-wine vinegar. And for some reason, if I use the home grown cherry tomatoes from my backyard, the salsa is a redder color and much more flavorful.

  • I used 10 Roma Tomatoes and 5 Jalapenos and it filled up to the top of the bowl, the bowl as about the same size as the one in the video. How did you use 30 Romas and only got that much tomato, I used 10 and it filled the whole bowl. This video is a little faulty. My Salsa didn't even come up hot nor mild, its weak. You have only 2 Jalapenos with 30 Romas and said it came out mild, I used 10 for 5 and added 4 more Jalapenos still not hot. This is the last time I'm taking steps from a white guy.

  • @williafx update, I did a little variation on this last night... using only 2 romas, 1 jalapeno, 4 cloves garlic, 1/2 onion, 4 chipotles, 1 tsp salt... no cilantro... man did this turn out smokey and tasty! Very hot!

    Many salsa recipes will spoil even if canned because of the content of the salsa. Be very careful!

  • nice recipe! i mexican and make a similar salsa (no chipotle or vinegar though). i add a slice of fried bacon (1 for every six to eight tomatoes) to the mixture before blending.

  • Hmm. I am very biased since I use the way my grandma made it back in San Antonio. . .

    Add a little sugar whenever you add vinegar. It counteracts the acidic taste. You want a salsa to be sweet and spicy, not sour and spicy. If you want less spice, remove the seeds from any peppers. Simmer the whole salsa for a while, it just does wonders for the flavor. I liked how you broiled the ingredients. I just toast them in a skillet, no butter or anything. Other than that, looks pretty good.

  • Well I only had 12oz jelly jars and I tripled this recipe and got 12 jars put up with about one jar left for fresh eating.

  • No thats perfect, Im thinking of canning "smaller" just in case refrigerating our darn food becomes too expensive lol Besides how many times is a large jar opened only to sit in the refrigerator way too long and the food go to waste? Too many times, I'm gonna get smart and do smaller jars of everything besides it helps you say "no" a bit more easily then overeating on stuff, a small jelly jar is just perfect I think.
