if you just change your bike motor to delta..by unwinding the y configuration and turning into a delta configuration.will you loose hill climbing capability..
Could you provide the schematic for the controller and contactor? I'm interested in making my own e-bike and wanted to compare notes on what you are doing with your bike. Good job in any case experimenting with Delta-Wye.

Yes Luc.. I could also get that speed at 1 Volts and 200A if i would... but volt vs speed isn't as imoprtant as power vs speed!.. You know... Volt is only EMF.. .the less volt the more current for the same power!... so by using my 5305 with 100V it only draw 9A at 60km/h =) or would also draw 18A at 50V..etc
Less volts = less batteries = less waste and less expense. Trust me if you were to take your exact system, mount the motor, put it on a freewheel, you will go faster than you would direct.
Put that thing on a freewheel with proper ratio and it will do more speed on less volts. Great work anyhow. Thats about the speed I get on 36v no load.

When you switch from star to delta, what is happening to the current and the voltage?

In delta the current increase by around 80% but the voltage is the same ( battery voltage) ( in fact it drop just a bit ( less than 1 V at full load)
