    This is a difficult cake to make, and the directions in the video are very incomplete. My guess is you either didn't beat enough air into the eggs, or the batter went flat. You have to fold the flour into the whipped eggs quickly and carefully before they deflate. Otherwise you end up with a flat, sweet omelet. The butter also deflates the batter too.

  • I made a cake today and its the best- exactly looked and tasted like tha cake sold in bakery! Its very very easy-- mix 2eggs with 1/2 cup sugar, 1/2 cup butter nd 1 tsp vanilla extract and 1 tsp lemon juice. Mix 1cup flour and 1 tsp baking powder and mix all the ingredients together. Leave it on the stove for 30mins at 350. Its ready and yummy!!!

  • i think you only need to heat until the sugar melts. the water does not need to be boiling. if you cook your egg too much it would curdle and you would have scrambled eggs...

  • I just made this using pain flour, i didnt think it would turn out but it did, just follow all instructions and you should be right, also...maybe use a bit less than 1 cup of sugar as it turns out quite sweet.when beating the egg mixture....keep beating till soft peaks form and no more big bubbles then add flour...might take u 10 mins with and electric beater but it's worth the time

  • its a great job but not a friendly video. always try to give proper explanation that everybody can understand. without eggs also, u can make great sponge by using full cream milk n corn flour.

  • I just made this recipe and it taste great!!! My baby loved it! I just didn't know how long you heated your egg and sugar so I just put it for a few seconds and then took it out to mix. Somehow my batter at the end didn't look thick and fluffy like yours, but it does taste good.

  • How long did you have to mix your egg and sugar on top of the heated pan? I would like to try this recipe, but I don't know how long you stir it on top of the water. Is the water suppose to be boiling hot before you put it on top? Or should it be warm? Please let me know.

  • I made 3 Granoise sponge roll cakes (because I'm making a huge asian dragon cake and I needed various sizes so I thought I'd try out different recpies) and yours was the best! I added 2 T of dark cocoa powder to each and filled each with buttercream frosting and an inner row of fresh rasberries) but yours was the largest and fluffiest. I had to beat the egg mixture for over 18 minutes but I guess that is what made it so light. I cooked it for about 12 minutes at 350. Thank you for sharing.

  • . . . Have to admit, although it looks good, I cannot be bothered with the measuring and heating and melting. I cheat. Out in 2 eggs, bung in a whole load of flour, some butter, and whatever sugar I cant find, spend 10 mins beating it so that everything at least looks like its mixed together, put it in little cake cases of a tray, (whatever I can find,) shove it in the oven and hope for the best. It almost always works. ^-^

    i tried this recipe yesterday. the batter in your video looks awesome, and mine turned out the same, the cakes were nicely risen when they came out of the oven , but when i left them for cooling they shrunk, and tasted uncooked, like an uncooked omlette. Please please Please tell me where would i have gone wrong? Waiting for your reply.

  • The idea behind this method of making a cake is you stand the bowl containing the eggs and sugar over a pan of hot water (not letting the bowl touch the water). This speeds up the whisking time considerably. However if you wisk using an electric whisk you don't need the bowl of hot water underneath.

  • I was under the assumption that the water bath would allow the heat to completely dissolve the sugar without scrambling the eggs. Every genoise recipe I've ran across calls for a water bath. Intriguing...

  • That is correct, but you will achieve a softer texture if you use an electric whisk on a high speed without the bowl of water underneath. For faster whisking times you would use the bowl of water, but this was traditionally used when whisking by hand, and produces a slightly firmer texture as the sugar crystals would be completely dissolved before baking, rather than melting during baking.

  • 180 gr sugar, 6 medium eggs, 100 gr cake flour, 75 gr cornstarch, + butter, liquor, aromas as needed... This is more or less the master formula for genoise sponge cake.

  • You lost me on the water bath. What do you do with that. You say disolve the sugar, in the water? how much water.

    The water bath is used to warm the eggs and sugar mixture. This helps the sugar disolve into the eggs.
