I've seen a lot of pianists do this. My cousin plays the piano and sais he does this because sometimes parts of a song are written for just one hand. There's no use putting both hands on the piano when there aren't notes written for it.

Violinists will also do a similar thing and slide their hand randomly up and down the neck especially after a difficult passage.
