I dont know if you have tried it, but the Blackout Rom Manilla 2.5 running on WinMo 6.1 runs manila 2.5 the best i have ever seen. I also have cht installed on it and it runs rather fast. I dont like sense 2.5 on wm6.5 but on 6.1 i actually like it. I dont know why people dont build 2.5 on wm6.1. You dont even really have to use any of the 6.1os. Htc takes care of all the ui stuff you need.
