Using selective breeding, they make them more aggressive. And there IS training involved. Perhaps not with the people you spoke to, but the majority DO train their dogs to fight. Yes, dogs do fight. But they train them and bring it out in them.

The majority of dog fighters leave their dogs alone for for long periods of time and do not socialize them, which causes them to be more aggressive. The reason the majority choose pitbulls is because they are compact and ferocious in SOME cases. But dog fighters use certain training techniques such as putting another animal in a tire and raising it up, and letting the dog attack it.
