In order to prevent browning of the crust you can put a parchmant paper or aluminium foil collar around the edges. It will make for a nicer presentation and final product.
It's better to use glasses cake pan because in this case you don't need to put a lot of butter or oil. And in the video I gave you a tip: to put a bit of flour on oil and only then to put the pastry in.

I don't really suggest you to use this kind of cheese. The better for this recipe is simple soft cheese.

Are you using Mascarpone or Ricotta cheese for the tart?

I am using soft white cheese, if you don't find it then it's possible to take ricotta but absolutely not mascarpone.
