i dislike mayo in general, but it's needed for certain sushis, and i don't mind, cause i never taste it. i think it's mostly about texture and getting everything to stay together.
@anyrecipe not usually. in overly westernized versions mayo is added, but if you go for that might as well have crab imperial or some other traditional american dish :P. i eat sushi for the deliciously fresh flavors and beautiful presentation. mayo has no place in that realm :P.

it's generally referred to as QP mayonnaise. it's lightly seasoned. but every sushi bar I have worked in just uses some pretty cheap basic sorta mayo

i got a own mayo recipe for sushi :)
i use mayo and the ball inside a cooked egg and some wasabi put it together in a bowl and mix it :)

there are many rolls with mayo in them. many places use that as a main ingredient in their spicy sauces or spicy mayos.

mayonnaise is used for the crab in california rolls, and the seafood that needs to be spicy, with the chili oil or sriracha sauce in spicy rolls.
