do not disconnect "wires" (correct lingo is actually cables) at the handlebars!!!! number 1) get a haynes or Clymer manual!
2)you disconnect those cables at the carbs themselves, there is usually a metal tube that the cable sheath is inserted into, this tube shaped metal guide will have a slit in one side of it. Pull upward on the cable's rubber sheath at just above this guide to reveal the metal cable within, and then maneuver the bare cable out through the slit... pretty simple but not obvious
That looks like the innards of a Suzuki Katana :) . I love my Katana!
