I could imagine these fish being even more popular if they were built like a normal fish with regular pin bones in the front, not all the way down like this.
I'm also amazed that there would be any form of catch limit on them, they're a invasive species, go all out with no catch limits and year round seasons.
At the rate these fish are spawning/growing in number and size, why not have fishing tournaments with no size or number limits allowed and clean/donate to the hungry, food banks/shelters. With this fish being as plentiful and lean as said, its a good cheap food for EVERYONE to eat.
I personally have NOT tried it yet, but am more than willing should one land for Me.
They're much better than grass carps... Don't stop trying them because of the name "carp"... btw, thanks for the video on how to do the preparation.

Did a taste test between Bighead, Buffalo, Walleye and Catfish. All deep fat fried and the Big head was cut like the Carp wings and the Big head won.
