A good stock makes a difference, and if you don't have saffron etc you can buy 'paella seasoning' (known as 'colorante' in Spain) in most supermarkets. And if you're a vegetarian you can leave the chicken and pork out altogether.

You can use expensive saffron (by weight one of the world's most expensive substances), but in Spain people mainly use 'colorante amarillo' (yellow colouring), made with corn flour, red & yellow colouring and turmeric/cumin (I think?). It contains no fat and no calories.
Paella rice?? what is the diffirent of the ordinary rice? japanese rice is like sticky rice, so i think is not good for Paella or for any fried rice because is not dry. hmm so well, i tried to find it dried rice, When i'm visiting in my country Phippine my Mom cooked Paella or Valenciana is soooo very delicious, so i miss it tribbely.
@722Lena There's a kind of rice that it's very famous in Spain which is where the paella born.called bomba rice it's that type of rice it looks like little pearls very difficult to cook you have to put three times as much of water to cook it well

Lo importante es la presentación, la maña y el arte que se da el chef. Para mi el aprendizaje de este video es añadir el pescado al final y ver lo perfectamente integrado que queda al final de la cocción. Una idea que pienso poner en práctica

@MACERADO you keep on complaining about people adding onion and pepper and paprika... paella has different version, when they cook your spanish version.. they thought, Oh, maybe I should add onion, and they found out that it taste BETTER, and then.. they thought of adding paprika, and it taste BETTER.... so there you go.... just try to have an open mind
the problem I have with making paella is that people are too damn picky about whats in it. "I cant eat claims", "I can't eat meat","I hate squid" blah blah blah
