I have never heard of somebody having to under cut a plate like a million times.

I was taught to make plates with lots of undercutting.
Are you used to making plates on plaster bats? You don't have to undercut over and over if you use plaster bats.

Watching the potter was a treat. Listening to the background noise and the lack of planning for making the video was painful.

The clay is called 308 Brooklyn red clay, probably developed by Jack Wolfe. This is sold at Ceramic Supplies.

Well, very nice throwing skills here, but, (and I'm gonna sound like an asshole here), what kind of clay was the other person in the background using? I love that orange tinge to it.
