OK. We made this last night. REALLY good. I used more apples than what you said to use. I also used Nutmeg, regular Cinnamon, Chinese 5 spice, white AND brown sugars. Although I didn't use enough. I also put Vanilla extract into the apples while they were cooking. I was thinking about next time I make it, making a caramel-ish type sauce to put on the top of the slices to eat more like a dessert. Turned out really well, I just needed to add a bit more sugars next time.
Lovely recipe. I tried something different. I placed the rolled out bread on a "silpad" then used scissors to cut the slits. After putting in the apples and folding over the dough, I didn't have to move it since it was already in the pan. Just an idea.
@9aspengold5 I also did something like this. I rolled out the dough, and then put that over my pan, then cut the sides, so that I didn't have to move it after it was full.

It looks good, but not quite a *bready* risen loaf is what is needed. More of a pastry crust, lighter, crustier. I would also have used an egg-wash rinse with a sugar sprinkle on the top. You might also have put nuts (walnuts, pecans) and raisins or dried cherries/cranberries in the mix as well. Just different ways to jazz it up for the season.
@blukatzen Your ideas sound great! I'm going to be trying a few ways for this holiday coming up. But the one I had as a child was a normal bread and only had raisins in it.
I've been trying to find a recipe for a holiday pudding that they made a long time ago. The swedes call it (sounding it out) ooster caca and it is basically a cross between bread pudding and a custard. Dad used to call it rubber pudding too. But when eated while still warm with some milk or iced cream it is just amazing. Been finding lots of rice puddings but that is not the same thing. The bohemians, the swedes, the norwiegans and danes all called it their own specialty
@BornRandy62 One of my G Grandpa's was Swedish! My Aunt makes a great bread type pudding with a caramel sauce over it. I think I have the recipe, if not I'll ask her.
You don't happen to know the spelling of the dish do you? I did a search and found a recipe for rooster cake (Tuppkaka), but it didn't look quite what you were looking for.
@HomesteadAcres I have seen many custard and bread pudding recipes and an over abundance of rice puddings but not this. 40 years ago there was a restaurant in Payton (same town that is mentioned in Saving Private Ryan) Iowa called Payton Place that made and served it during holiday meals. I might have to go to that town (15 miles away) and find somebody who has it written down

Wondering if your childhood treat was made with pie pastry rather than bread dough? This version probably could have used a glaze, icing drizzled over it ? A bit heavy on the bread side eh? I bet it was good tho
