Simply put:

The number of people who subscribe to your channel shows how many people liked your videos and want to recieve updates on what else you post on youtube. Kind of like your followers. Obviously the more subscribers the more popular you become.

And if you are a partner you get money if you aint you will get nothing! only people with many views and subscribers can be partners.

if you watch someones vid on youtube and you lke what you see and you wanna watch more of there vids then u subsribe too themand when they make new videos it will apear when you log into your youtrube accoutn under the title subscriptions and there new video should be there thumbs up for this so that new youtubers can see this and stop asking what subscribing is

There are some people that make videos quite often (like Ray William Johnson and MysteryGuitarMan) and you want to be notified every time they make a video so you can see their cool videos. Every time they release a new video you can see them in your "Subscription" box that is on your youtube home screen (assuming you are logged in) so you don't have to check every day to see if they have posted a new video. (if you need more info, just ask me) :)

Subscribing to someone video, to clarify, is simply saying that you wish to receive an update each time this person makes a new video. Basically what I mean by this is that each time the person you subscribed to posts a new video, you will be notified and in turn you may go watch it. It saves having to constantly monitor the persons profile for when they've posted a new video, and you can keep up to date with everything there posting.
