what distro are you using? (ive been looking for a distro without gui for a while..)

you can run any distro without a gui, just dont configure the xwindows server. if you dont have xwindows set up and dont have xstart in your .profile errrr whatever fuckin file that is. im too lazy to check over in my home directory.

but yeah, just dont set up xwindows then xserver wont be able to start, and you will be yeilded without the gui. or you could just leave out the xstart from that startup file and then you will load up with the cmd line, and later you can start ur gui

use backtrack, its a live CD thats fully equipped with every hackign tool known to man and if ur a power user with UNIX you can permanently install it.

DSL has a GUI yes, and it's actually very easy to use. I wouldnt even categorize it as a GUI it's so ... 80-90'ish hacker style :P
