this is also a great way to do zuccini. and for similar french fry type SCD freindly food I like to do teh shoe string carrots in olive oil in teh frying pan.
@fernpixel Actually, after your video i made them "french fries" with provence herbs if that rings any bell :P Delicious! carrots work good for that too, and put them together in an oiled tray and the sweet flavors of the carrots mix in the pumpkin a bit as well ;)mm still have one pumpkin left, but the salesman told me i could store it for about a month or two so i'll just leave it there to ripen some more =)
By the way, peeling the squash with a potato/carrots peeling thingy works good ;)

425 F for 40 minutes and turned them over every 10 minutes so they won't burn. Substitutions will never taste exactly like the original. But the texture is very close. I think it tastes closer to sweet potatoes, just not as sweet.

It happens to me too :/ I also notice that I get cravings around that time and I end up cheating on my diet, so that might contribute to my symptoms around that time. For me it goes away when that time is over though.

The best ice cream to try on the scd diet would probably be Luna and Larry's Organic Coconut Bliss ice cream. It contains guar gum, however, which is illegal. Some can tolerate it though, I imagine.
There's nothing wrong with potatoes. Its just that I can't eat them anymore because they're restricted from the diet that I am on called "specific carbohydrate diet". For me it takes too long to break down and it causes problems. I can't have ice cream anymore either :(

Yay! I've used Spaghetti Squash before. Its quite nice. I've also roasted an Acorn Squash and a pumpkin the same way :)
