I'd like to add "The One I Love," "Lovesong," and "Jolene" to the roll call of great cover choices (which are occasionally rolled into a set with Vanessa's beautiful original songs).

The first 2 are old favorites of mine, and the latter a new favorite since hearing Vanessa and Manuel perform it! "Freeway" is definitely a fun addition to that list!

I'll also echo the longing for recordings--though I imagine there are "legalities" preventing that.
