@goldie0800 WHAT, are you serious? That looks over cooked to me. Either the lighting is wrong or that is cooked to medium. He must have let it sit in the oven for another 50 minutes to rest.. Looks way over cooked for my liking.. Rare is my preferred way of Prime Rib or Standing Rib Roast.

@KissHope Correctly matured beef should not taste like show leather whether it is a lean or fatty cut. The cooking just needs to be done will a little more care if the meat is leaner to avoid tough and over done steaks.
I agree but most people being afraid to eat beef not well done will overcook the meat. Have you done a method in the oven with extremely high heat to start then turning off the heat letting the meat stay in oven for a period of time? After looking for ways to cook boneless eye of round this seems to be a very interesting method and the roast looks wonderful, with browning an inch in but the rest nice shade of pink.
@KissHope I would suggest you opt for "pan to oven roasting" which - as you said will give you that high heat at the begining to sear the outside of the meat and then pop it into the oven for the rest of the time. If you headf to our website and follow the drop down menu at the top right side to the meat cooking guide that should give you full times/temps! Happy cooking!
Oh yes when I do chops, steaks etc I always sear in pan to develope the color then pop into the oven all the yummy brown bits with the miallard reaction. How else to get a tasty au jus or gravy. Thanks for the tip on your website the temps will be helpful. Have adapted to using a therometer to test for doneness instead of the poke and hope method. lol

@reginecass u can make the gravy by using the juices that came out of the beef whilst roosting. all u do is mix it with some beef stock (liquid) which u can buy from a supermarket, then season to taste. also, if it's too runny, u could add some corn flour to thicken the sauce. simple as that
@coltsuperocean10 As our meat is frozen very rapidly and to such a low temperature it keeps everything in prime condition. Our packaging is also crucial in avoiding freezer burn on the food. The key to frozen meat is all in the defrosting, which should be done in the fridge over night. Remember that once the meat is defrosted it will need to be removed from it's packaging, patted dry and left to "bloom" for approx 20 minutes before cooking!More info can be found in our Meat Guide on our site
@coltsuperocean10 frozen meat actually has a tenderizing effect when the water freezes inside of the meat. that whole buy your meat fresh from a organic farm is just a way to make you spend double or triple per lb than you would from heb. average person cant tell the difference from select to prime or wagyu for that matter. quality is nice for bragging rights, but i can take any select or choice piece of meat and make it taste as good as any 5 star restaurant
