I say Luke is a prime choice for this level. He has to take a more defensive stance against the boss but the boss can never pass though a defending saber when your in the corner. Time your drops to hit him without getting hit and patch up with Heal when needed.

I prefer Luke in this one for the Attack when Jumping during the level.

Boss reminds me of Gooma the Lake Palace boss in Zelda 2 The Adventure of Link

I used Luke's force freeze to get past the large turrets. But, for the boss, I used good ol' Chewie.

Chewie's arguably the best character to use in this game.
