  • One rule about cake making: DON'T use an electric mixer, it overworks the gluten from the flour making the cake tougher than what its supose to be. Instead use a rubber spatula or wooden spoon and mix or fold until the flour is NO LONGER TO BE SEEN. Folding adds more air to the batter and makes all cakes spongey and moist. Overmixing makes it tougher and drier =[

  • @chullbulli: yeah it's mostly recommended to fold and not to overmix any type of batter so that your cake, like that lemon drizzle cake, can come out fluffy and moist ;] just put some LOVE into it and treat batters gently <3 I have my cake business at home and that's what I do everytime and they turn out great, I hope this helps hehe.

  • Carrot Cake 2 cups flour 2 cups white sugar 4 eggs 2 teaspoons baking soda 2 teaspoons baking powder 2 teaspoons salt (or 1) 1¼ cup oil 1 pound of carrots, shredded 2 teaspoons cinnamon 2 teaspoons vanilla
  • Preheat oven to 375. Sift dry ingredients. Add oil and vanilla. Start mixing. Add eggs one at a time. Mix in carrots. Oil and flour pan. Bake for 50-60 minutes.

  • baking powder makes your cake puff up like a ballon and baking soda makes it soft.

  • Could you give a measurable quantity( like in grams or ounces) to the carrots - there seemed to be about four carrots on the counter, but varying sizes.

  • It's 1 pound of carrots. The number of carrots depends on the size of them. You can usually buy 1lb bags at the grocery store.
