sazknits, thank you. Yes, it does answer the question. If I understand you, I can rearrange the stitches into whatever order is needed. That would also suggest that that first CO stitch after the slip knot could go in either direction, depending on whether the pattern calls for K2P2, P2K2, P1 K2P2, or whatever. Yes, that helps.
One more: If that first scoop after the slip knot goes down, scooping the yarn closest to me, when I move the needle to my left hand, that's going to be a knit st, yes?
I just answered my own question #2. Yes, you can do it, but you really have to complete the 2d setup row in the usual tubular way (without yarnovers) or else you don't get the nice tube look, and it isn't as stretchy. Next time I would make the brioche setup row after the 2 tubular setup rows.

@knitjunky hi there! (i work for Ysolda). For the first question, I think they were arranged like that because the pattern that Ysolda did the tutorial for (Gretel), started with a p1 at the beginning of the first round. You could change it though! Hope that helps :)

Is there a version of this, for people who cannot hold their fingers in that position? (i.e. Me!)
