  • When mom makes them with the custard, she makes the pancakes half the usual size, so they're like small delicious bites :) Thanks for the recipe though, will be using it soon!

  • I thought that atayef were to be fried !! We stuff with cheese or nuts and then deep fry them

  • @ehjail you can definitely fry these as well and stuff them with cheese, just close up the pancake entirely and fry it then soak it with syrup :)

    I am Moroccan and love Moroccan food and sweet things. It's funny to see some resembles in things we make. I have never heard of this recipe. It really looks YUMMY!!!

  • @hmlys81 well the written recipe is on my site. If it's not as thick, next time try adding more cornstarch and bread, that will thicken it up :)

    I was just wondering if it would be okay to use only regular flour and no whole wheat flour? I only have quick rise yeast left (I have ALOT, so i really want to use it up) can I use that instead of regular yeast?

  • @7anoony you can definitely give it a try and see how it works out with the whole wheat self rising flour. let me know how it works out. my only concern is that baking powder makes the pancake more cake like and maybe it will break when you try to fold it over.

  • @dedemed I had a couple of questions for you, first if I decided to go with the sweet cheese recipe filling that I had found on the internet to make, can I deep fry it? Do the bakeries usually fry them or leave them as you did them? Last question, what kind of cream do you use or should I use, half and half or whipping cream? If I understand correctly you used whole milk, 2% milk, cream and rosewater, orange blossom, water for the corn starch right? Correct me if I'm wrong. Thanks a bunch! :)

  • My batter was a little thick so I added more milk. Is that fine and should I adjust anything else?

    That being the case, I would assume the pancake would be fried first and then filled with the cream.

  • @east02west yes for cannolies, it's actually a dough that you use and deep fry it before filling. Similar concept, give my recipe a try, you will love it. You can also, deep fry these pancakes but make sure you close up the pocket all the way first and then deep fry :)

  • @Besaha1 well it does not crystallize b/c you use water in the recipe, not just sugar and lemon. the syrup video is on my site as well :)

  • you could still deep fry them if they're filled with custard...they sell them here in pastry stores with both walnut and ashta...and they're both deep fried..there's actually two types of atayef ashta...one is the deep fried one and the other is called atayef asafiry where you don't fry it and leave the pancake semi-open :) nontheless, good instructions :)

  • Hi Dede, where are you from? I'm Palestinian and I've never seen the Katayif done this way, I'm used to having them completely closed, and either put in the oven or fried. But hey everybody has their own way. I'm gonna try using your recipe for the pancake though

  • Give it a try, I'm sure you'll like it.  My parents are from Lebanon and this is how we make it there, it is light and easy to make :)

  • well , i am from Palestinian too and we leave some part of it open when we fill it with '' custard '' and we dont put them in the oven , but if u fill it with nuts '' like jooz '' we close them and fry or in the oven

  • Hi Dede when i made the qatayef pancakes (using your recipe ofcourse), they had holes in them, can you tell how to avoid that because i would like to fry them once they are stuffed.

    Will appreciate a responce.

  • Hello, well they should have bubbling holes on top, like in the video, if the holes are all the way through the pancake and not just on top then you need to make the batter a bit thicker, maybe add 2 tbs of flour and then pour the batter thicker in the pan, do not thin it out. THis should correct the problem.

  • when you deep-fry it, do you need a batter for it? or just close up the pancake and it works well enough?

  • yes, it is actually sweetened pickles orange peel, you can buy it at MIddle Eastern grocery stores :) or just cut up some maraschino cherries :)

  • I have never tried the custard. We make them with the nuts or cheese, close them up all the way and fried. I will have to try this though! It looks so good!

  • Yes you cans use other flavoring if you'd like, it's all about experimenting and making things sounds great :)

  • Thank you for all the videos..Trust me I am going to need these in time due. At any rate: you could add cherries on the open end, they look cute. We call them asafeer (why? I have no clue). In regards to deep frying the atayef, to save on calories, you could bake them in theoven fr a little bit with a little (samneh-arabic butter) on each piece, then put the ater (simple sugar), great also. Best!

  • YUM! I remember those! My ex husband made those stuffed with crushed walnuts that were fried in butter and cinnamon sugar. Then he topped them with that sweet syrup. :P YUM!!!
