When mom makes them with the custard, she makes the pancakes half the usual size, so they're like small delicious bites :) Thanks for the recipe though, will be using it soon!
I am Moroccan and love Moroccan food and sweet things. It's funny to see some resembles in things we make. I have never heard of this recipe. It really looks YUMMY!!!
so am gonna surprise my family on eed al fitr with this incha Allah ! Thank you!
I did not. We received the very sad news from Morocco that my grandma died so I lost my will to do anything. But I will remember yourt recipe. many thanx
@tchaikovsky1979 I am so sorry to hear that, but try cooking, it will take your mind off things and I'm sure your grandmother would be happy to know you were cooking.
Hi Dede! I love your recipes.I tried to make the custard filling for the first time and it is still lumpy and not as thick as yours looks. Any suggestions? I followed your recipe as best I could. Thanks!
I was just wondering if it would be okay to use only regular flour and no whole wheat flour? I only have quick rise yeast left (I have ALOT, so i really want to use it up) can I use that instead of regular yeast?
@7anoony you can definitely give it a try and see how it works out with the whole wheat self rising flour. let me know how it works out. my only concern is that baking powder makes the pancake more cake like and maybe it will break when you try to fold it over.
@dedemed I had a couple of questions for you, first if I decided to go with the sweet cheese recipe filling that I had found on the internet to make, can I deep fry it? Do the bakeries usually fry them or leave them as you did them? Last question, what kind of cream do you use or should I use, half and half or whipping cream? If I understand correctly you used whole milk, 2% milk, cream and rosewater, orange blossom, water for the corn starch right? Correct me if I'm wrong. Thanks a bunch! :)
Thank you for posting this. I never knew how to spell this in English lol so It was so hard to find this recipe. Thank you for posting. I am a big fan!
So so happy I found this recipe!!! I used to go to a restaurant to eat these pancakes but now since I found a good recipe, you can bet on it, I will cook them myself!!! Thanks!
@east02west yes for cannolies, it's actually a dough that you use and deep fry it before filling. Similar concept, give my recipe a try, you will love it. You can also, deep fry these pancakes but make sure you close up the pocket all the way first and then deep fry :)
you could still deep fry them if they're filled with custard...they sell them here in pastry stores with both walnut and ashta...and they're both deep fried..there's actually two types of atayef ashta...one is the deep fried one and the other is called atayef asafiry where you don't fry it and leave the pancake semi-open :) nontheless, good instructions :)
well the written recipe is on my site so you can find it there along with many other recipes all written out and you can easily print or email them as well :)
Hi Dede, where are you from? I'm Palestinian and I've never seen the Katayif done this way, I'm used to having them completely closed, and either put in the oven or fried. But hey everybody has their own way. I'm gonna try using your recipe for the pancake though
well , i am from Palestinian too and we leave some part of it open when we fill it with '' custard '' and we dont put them in the oven , but if u fill it with nuts '' like jooz '' we close them and fry or in the oven
Hi Dede when i made the qatayef pancakes (using your recipe ofcourse), they had holes in them, can you tell how to avoid that because i would like to fry them once they are stuffed.
Hello, well they should have bubbling holes on top, like in the video, if the holes are all the way through the pancake and not just on top then you need to make the batter a bit thicker, maybe add 2 tbs of flour and then pour the batter thicker in the pan, do not thin it out. THis should correct the problem.
I have never tried the custard. We make them with the nuts or cheese, close them up all the way and fried. I will have to try this though! It looks so good!
Great recipe, but I didn't see the listing on your web site in order to get the proportions of ingredients...can you assist me in locating the measurements??
That looks yummy! Just the look of the finshed dessert had my mouth watering. Question if you don't have any of the flavored waters, could you use something like Almond or Vanilla extract?
Thank you for all the videos..Trust me I am going to need these in time due. At any rate: you could add cherries on the open end, they look cute. We call them asafeer (why? I have no clue). In regards to deep frying the atayef, to save on calories, you could bake them in theoven fr a little bit with a little (samneh-arabic butter) on each piece, then put the ater (simple sugar), great also. Best!
i think we can fill them with 8eshta and close them up and then fry them in a little oil (not deep fry) so they just get crispy from outside and then dep them in the
I loooove Atayef :) its one of my favorite Ramadan deserts! Its great learning how to make the pancakes on your own.. I usually buy them ready but I'm sure making them @ home would taste a gazillion times better. Thanks Dede for a wonderful recipe :D you are awesome!
