Great video! I was wondering how long do the infused cherries last? I know that if fruit is canned and stored properly, it can last for a long time. The same process was not done with the infused cherries. Does the alcohol act as a preservative?
You can reuse the glass part of the jar but you cannot reuse the lids. The sealing agent on the lids is a 1 time deal. This is probably what they meant. The lids can be purchased separately from the glass jars for a very inexpensive price.
Nope. Just eat them plain. Like he said, they are great for a small desert. I only take them out usually when i have company over. They are also good in cherry pies too. Use half regular cherries and the other half the infused cherries. MMMM delicious!
Where are you getting those jars and lids for the jam canning as shown in this video? I've wanted to use lids like that as opposed to the two piece. I'd prefer the more Smuckers jam style lids if you know what I mean. Could you send me a link to them please? I wasn't sure if it's the best bet when canning jam as I've read... but I trust you guys! :D
1. put jars/lids in low oven to sterilise + warm through.
2. put prepared fruit in pan withsome water+ lemon juice if needed+ simmer till fruit soft.
3. Add sugar, stir without boiling till sugar is dissolved.
4. Bring to rolling boil for required setting time.
5. test a teaspoon of jam on cold plate and leave for a minute, push the blob with your finger, and if it has formed a skin that wrinkles up, its ready.
6. Now simply ladle into warm jars + seal with the lids.
thankyou very much. We don't have cherry jam in aus i don't think (well i am sure specialist shops may have it) I can't wait to make some. Also the infused cherries are going to be big friend pleasers!!
Even though my entire family is from the Caribbean (let me not forget about Britain)they have now settled for the convenience of imports. Hardly anyone, if anyone, farms their own goods or anything of the like. I like knowing my family is getting the best as well. So thank you for these videos.
A question, I didnt know you cant use a jelly jar twice, is that what you guys meant in the begining of the video? I'm confused on that detail can you help?
Other then that I been watching all your videos and learning a bunch, thanks!
I have been canning for years and you can re-use your jars - i wash mine make sure they are free of nicks around the edge and then bleach in hot water rinse and air dry - hope this helps....
this video was wonderful and enjoyable. a real treat and well directed. your instructions were clear and i loved the infusion fruit part. thanks for sharing :D

In UK we simply ;-
1. put jars/lids in low oven to sterilise + warm through.
2. put prepared fruit in pan withsome water+ lemon juice if needed+ simmer till fruit soft.
3. Add sugar, stir without boiling till sugar is dissolved.
4. Bring to rolling boil for required setting time.

How did you process the smaller, fancy, infused cherries jars? Did you put them in the same way you did the jam? Thanks. Great videos. ~Jeri

I think those don't get boiled because of the alchohol.

This is an awesome series. Thanks David and Andrea. What a great duo! Can someone clarify why you can't or can use copper with fruits and lemon?

Hello,
Just canned my first jam and have some questions that i hope you or another expert on this forum can answer.
1. what is the use of sterilizing jars before canning if one runs a non-sterile instrument along the sides to get rid of air bubbles?
2. i suppose that processing jars in a canner cooks the contents further?
3. is it okay to put newly processed jars straight into the fridge to cool?
4. is the processing time shorter/head space larger if you're using smaller jars?
thank you.

Is it safe to use lemon and acidic fruits in that unlined copper jam pan?
loppyandpip 2 years ago
no it's not safe to use copper or iron pots with acid fruits or veggies... use stainless steel pots.....

The lids on any canning jars may only be used once as they will only seal properly one time.

I too have been making jam for years, nothing wrong with re-using old jarsat all.
serenagel 2 years ago 2
a lot of peole reuse, I was a bit suprised by that too. In fact some people put labels on their gift jars that say "please return jar".
kerryoke68 2 years ago
but then again, they sell jars :)

Thank you immeasurably for this video series! I'm a first-time canner and learning from print sources - it helps to see canning "in action" as well.
