This soup was deelicious. I had a little difficulty mashing the potatoes in the crock pot and it wasn't quite as thick as I wanted, but it was very good. My husband loved it too.
We make this 2 or 3 times a month now..it's become a favorite in our house we add more garlic now and red onion gives it a yummy flavor but the first time we did it exact and it was great!!! Thank you!
I wrote 1 quart broth on my shopping list, got to the store & broth is sold in ounces. Not a huge deal, I figured it out, 1 quart = 4 cups or 32 ounces. Just a hint, please include that info in the future. The soup turned out good, not great. Maybe a little less onion, a little more potato. Not sure, gonna try again & see how it comes out.

I haven't tried this crock pot recipe yet, but when I am making traditional potato soup and it comes out too thin/runny...I add Ore-Ida instant potato flakes as a quicky thickener! If you happen to have one or more of their flavored varieties on hand it can add a little flavor punch to the soup as well.

Glad there are so many who do like it though. I've had good success with other recipes, especially the chicken ones.

I followed your recipe but added celery & carrots, and I also added an extra cup of water with 1 tsp of ham bullion for added flavor! Thanks so much for the inspiration!
Oh also, when I make potato soup, if it isn't as thick as I like, I add instant mashed potato flakes. It's the perfect way to thicken it up!
Crazy question, but do you cook it for 4 hours on high and then another 8 hours on low OR is it 4 hours on high OR 8 hours on low? Just don't want a pot of mush when I'm done! lol Thank you! :-D
Would be better if you threw in some pre-cooked bacon (1/2 cup) at the beginning of the recipe so that the flavor would permeate the soup. Love the recipe, keep u the good work!

Glad there are so many who do like it though. I've had good success with other recipes, especially the chicken ones.

@smylinjenn40 I don't mash mine at all. I just make a roux and use all milk to make mine. Not alot of people do it that way. :)
