The best redneck knives for cooking are OLD HICKORY KNIVES they were origanaly sold in hardware stores they are carbon steel hold up well have had my set for 35 years just use a dimond steel from walmart to sharpen

Carbon steel is the way to go... If you at some point get the idéa to make your own knife from scratch, leafsprings is a cheep and easy to come by material, dont know the carbon percentage but it's hard as hell and the knife stays sharp like a razor... Made a Bowiemodel knife some years ago when I had the garage and I used that for about everything possible... but someone needed it more than I so it grew legs and vanished into thin air... That sucked a bit... just a tip though :o)
