The only way water is going to hurt your bike is if you swamp it above the exhaust pipe. but also, unless you have a trail 2-stroke, then it's not meant to go in much water at all. and your kx 125 is not a trail bike. although what you were doing wont hurt it. however that XR200 is made to do that shit night and day. because it is a specially made trail bike.

I'm just wanting something to take in the woods with a decent amount of power. I'm 5'6 and also a girl. Should I be interested in this? Any advice is appreciated =)

Talk him down to $800, and make sure there's no oil leaks or smoke. The XR's a great bike, perfect for what you're looking for. The seat height might be a little high for you in the extremely tight single track, but even then I think you'll be fine. Happy riding!

Not unless the guy bought it new this year or something. maybe a fresh engine rebuild, but it better be perfect. I think you should talk him down to 1400, maybe 1450 or 1500 if it's real nice, but then again more like 1000 if it's bad. I got mine for 750 (it wasn't exactly "top-notch") but then I put about 700 more into it and now it's like new. I hope I helped some!
