Oh, and be sure to add cilantro to the meat. I like adding some cilantro diced to the meat when done so when u cook them they retain that rich herby flavor that is cilantro. and feel free to throw some red onions in there as well. I made a few with chicken and cabbage. but more meat in case u make them to freeze & reheat.,
yeah like teh chicanos say here, I buy manteca- natural lard, from the mexican stores which get it from the pig farm. makes them much much richer and better masa. I also like adding mole or pureed jalapeno and pureed ancho chiles to my masa for a slight kick. AND use chicken stock or pork. I use some of the cooled down pork juice as I usually make them out of pork. just roast a whole damn pernil leg. Adobo can also be bought but like anything doesn;t taste too authentic.

I would definitely use the cooking broth instead of water because the flavor is much better! I know a gal who used a little of the chili sauce mixed in with her masa. Her tamales were awesome and never came out dry!
@fatdanios actually, pure rendered lard is lower in saturated fat than butter and almost double in monounsaturated fat (thats the good fat) compared to olive oil.

Too much oil being used for only 4 lbs of masa mix. 20 oz is the maximum. Add baking powder to mix. Also you shouldnt add garlic to mix, it should only be added to filling mixture to keep both flavors separate. You will yield approximately 48 tamales with this recipe.
