  • We made this cake and it was dry and awful. Still trying to figure out what we did wrong (we followed the recipe I swear!). I'm just not as talented as Nigella :( 

  • @thefinewino Nah, the recipe's rubbish. Plus, you shouldn't blitz choc cake mix in a food processor because you'll over work it, leaving it dry and tough. Google 'chocolate mud cake' for better recipe ideas :)

  • @spamala12345 I also thought that bunging the whole lot in the processor would make a tough, leathery sponge but I've made this cake twice now and it somehow, bafflingly turns out light and soft. I think the trick is to mix it until it's all the same colour and texture and no more: 5 seconds of mixing, scrape the sides, then another 5 seconds.

    I've made cakes with whipped egg whites and careful folding that have turned out tough.Maybe the sour cream really is the key ingredient here.

  • @ScrewFoxNews I'm suprised, but I'll take your word for it :) My fave chocolate cake recipe requires you to melt the butter and cocoa with a litter water, then adding that to the dry ingredients plus sour cream and eggs :)

  • @sgbloke, I've just baked the cake for a midnight feast with some friends (sans filling) and the cake is wonderfully moist, soft and spongy, I made a few changes by adding chocolate chips to the cake mixture, baking all the mixture in one larger cake pan, to get deep chunky size portions and serving it with real custard. You can easily substitute the sour cream with plain yoghurt, without noticing a difference in taste or texture and it will cut down on some unnecessary calories too!
