  • Betty I finally made it, and it was sooo good! I made three batches. The first batch didn't have enough banana flavor, but I think my bananas weren't as ripe as I thought they were. My next two batches had a great banana flavor, I guess my bananas were finally very ripe. I will make this again. Thankyou. I love watching and trying your recipes.

  • Betty, I have a recipe that is identical to this except, instead of oil, it calls for 1/2 cup softened butter. Is there going to be a differenece in taste, or is it considered just a substitute?

  • @EvilandRandomppl Just cover the banana nut bread completely with plastic wrap or aluminum foil, and it will be fresh for a few days in the refrigerator. If you have plastic containers that seal, you can put slices of it in containers--or you may use Zip-lock bags, sealed tightly.

  • @skidmetal20 Yes, you just need to make sure that your artificial sweetener can be baked. Some artificial sweeteners turn bitter when cooked in the oven.

  • if i decide to bake this in a regular cake pan or a cupcake mold how much will i need to decrease the cooking time by?

  • @Cubeclarei That really depends on the pan. What I would do is to go ahead and put the batter in a regular cake pan or muffin tin, set the oven temperature as directed in the recipe, and then just keep a close watch on the oven. The muffins will take less time than the cake pan bread. Just keep testing with a toothpick, and when it comes out clean, the bread is done!

  • @SamsnowBB For each cup of plain all-purpose flour add 1 1/2 teaspoons baking powder and 1/2 teaspoon salt, and you will have the equivalent of 1 cup of self-rising flour.

  • Betty, I finally made these and they're really delicious! (I made them as muffins afterall, but I didn't have walnuts or pecans, so I put about 1 cup of chocolate chips and sprinkled some on the tops too). I had regular flour, so I added 2 cups flour then took out a bit of that and added the 3tsp of baking powder and 1tsp of salt... I was supposed to remove 4 tsp, but accidentally took out 2tbsp which is 6tsp flour, but they still tasted great. Thanks for the recipe; I'll put nuts in next time!

  • I'm psyched! Just the other day I had 3 very ripe bananas. I mashed and froze them and said to myself, "I'll bet Betty has a good recipe for these!" And you did! Thanks. I never heard of using a glaze on banana bread but it sounds delicious! :-) I'll be trying out your recipe next week. Can't wait!

  • @bettyskitchen I've made these a couple of times now, and they always disappear really quickly! I finally went and bought pecan slices so I now make them with ~ 1/3 cup of pecans, and about the same amount for chocolate chips. As usual the extra ingredients are simply to any individual's taste.

  • It's funny, because a lot of your baked recipes are like items at my work (I work at a coffee shop). We have those pumpkin muffins (which DO have cream cheese icing on them, as someone suggested) and all the muffins you've made. Thanks again for these great videos!

  • Sure, I've done that many times. Just thaw it when you want to serve it. I like to serve it warm sometimes--just 10 or 15 seconds in the microwave! Thanks for your question!

I made this recipe yesterday,and it was excellent,my family loved it.I make banana bread alot ,but this was more exciting not just another boring sweet bread.The almonds i added and the lemon glaze gave a burst of flavour with every bite.Thanks for sharing this now my favorite banana bread recipe.
