He was in a minor role in one of the Police Academy movies so I thought this was him in Summer School. Thanks for the correction.

Reason, Comedy is the hardest acting, and all of them get caught acting. Spencer Tracy once told a young actor who asked him what his secret at being a Great Actor was, and he said, Don't get caught. This movie SUCKS!!!!!
Actually the Principal is technically correct, though some consider both to be acceptable. Typically when using "as" in this kind of sentence there is an implied verb. So to get a good sense of how it should work, you need to both take out "You and" and toss in the implied verb: "They're as smart as you and ??" becomes "They're as smart as ?? [am]" ... which shows why "I" makes more sense. ("They're as smart as I am." is better than "They're as smart as me am.")
Actually, Shoop's right, the proper grammatical form is "They're as smart as you and me." - So the principal is an even bigger stooge than what most people realize.
