I've looked but I can't seem to find any record of Mashiro Sakurai actually saying Kirby's a boy, one could make an argument of instruction booklets use pronouns like "he", but on the other hand in Japan when something (like say an inanimate object) is gender neutral it is almost always described using the masculine form of speech so those pronouns could easily be a misunderstanding caused by the language/culture barrier.
