I know that I use Proppelerhead's Reason. And now I use their Reason+Record bundle. I used to use Pro Tools exclusively with Reason, but what I use now is so much more intuitive for a musician with experience. They use what is called a ReFill and its a different way of approaching synth that sounds much better. I was able to use the mock ups from that in a score for an independent film with a few live instruments.
It was amazing to hear the difference between the mock up and the rendition put forth by a live orchestra. There is no way you can surpass the dynamics, nuances, and emotional output of a collection of live musicians putting their heart into a performance.
this is true and probably will always will be, but the soundsnowadays have become such a good alternative that you can almost create the same emotion when you are on budget.
I found this video to be entertaining because I'm striving to be an animator and I love how music complements any movie or tv show live action or animated.
The subtle nuances of real acoustics one would perceive at a piano or with a real instrument are typically lost with soundfonts (though not necessarily synths), so composition isn't done with these nuances in mind.
I know this is speaking generally, and this isn't to discredit composers who work this way. It's simply saying that by this being a prerequisite, it solicits the exclusion of those who would rather use their aural perceptive abilities with acoustic instruments.

It is my belief that this happening of "sounding so real" leads composers to write and orchestrate using these soundfonts. Though this may be alright for James Newton Howard and Hans Zimmer (one of whom is a great composer), the fact that is has become a necessity decreases the chances of composers and orchestrators who would rather use their imagination and put in some effort. Since the mock-up was done by James Newton Howard I'd say it's orchestrated with Eastwest Symphonic Orchestra. Quite a lot of A-List composers are using this library for their mock-ups.

to be a good music composer are you suppose to play piano as your main instrument? if no are there examples of film scorers that barely play piano?

You're absolutely right. Though it is possible to pretend the dynamics are real through editing. Volume changes and what not.

one question: what program is used for that mock-up?
there's no way i can make Sibelius sound that good even by copying a Beethoven symphony with nuances and phrasing..
i might do something wrong or miss something.
