Have you tried The Ginger people Ginger Juice? It's sold at any Whole Foods. It tastes SO much better than fresh ginger. It's a different type of ginger root. They also make other products, like the candies that people going through chemo or car or plane sickness. Very good!
Sorry for nitpicking, but I did notice some things you could have done to improve the cooking process.
1)
Use your food processor more. You're wasting time by just tossing the carrots in the pot like that, the finer the chop the more packed in your carrots will be, if you can manage to get the liquids to completely flow over the carrots, the cooking time will be decreased.
When peeling the ginger just scrape off the peel using a spoon, using a knife or peeler will end up producing a lot more wasted ginger, while the spoon will remove the peel and only the peel.
3)
If you have a big enough saucepan to allow for this, it would be recommended that you sauté the carrots along with the onions, garlic and ginger. With exception of a few veggies such as potatoes, its usually best to sauté all veggies together.
