What happened to the Spanish onion, reco, garlic and plum tomatoes. And olive oil ? no big no. Just cut the onions really small then add the rest of ingredients. Onions release a lot of water to make the blending much easier. As far as green pepper u can add but we Puerto Ricans save that for recaíto and just add cubanelle pepper, red pepper & sweet chili pepper to sofrito.
