The game has an edit mode. Check that to see how the kits are made. All the kits in this vid have been made in-game using the edit mode, but by somebody else. I've made a few kits myself but it takes a lot of effort and the result is never 100% like the real thing.
With kitserver you can get kits excactly like the real ones, but I'm no expert on that. I know hardly anything on how to use it (it's complicated). I simply download what other people have made. I suggest you try the same.
You have to make them yourself or use an option file made by somebody else. There are many different ones and I myself have used several. Check PESGaming for example to find some good ones.
