Tried 2x, failed 2x.

I used fresh pears instead of canned pears.

The first attempt, I added the bourbon, but it imparted a bad flavor to the tart. So the second time, I left it out.

Second attempt, instead of pear halves, I sliced the very ripe pears. Big mistake. All the juices came out of the pear, and flipping it at the end resulted in hot pear juices flying all over.

Both times, the caramel had a bitter taste. I think the baking continues the caramelization process and made it bitter.
