  • Those are some nice bones in the oxtail. I have never had the chance to use oxtail; do they have much yummy marrow? As a side note, the brown bits are called "fond" in French! Thanks for the videos.

  • Hi Lila, I am making this right now and the pork is in the crock pot. I noticed after two hours of the pork being in the pot there seems to be scum in the liquid and I can't really get any of it out - is it okay?

  • @schweetheartmonkee Hi I see you posted this last night - Are you using pork or did you mean the oxtail? If you're using the oxtail there may be some fat and a bit of scum (you can see a bit in 4:16.) If there is a lot, you can use an absorbent papertowel and just lightly lay it on top and lift it up quickly to get the excess off; but usually there is not so much that it requires this step :)

    Thanks so much for the reply, actually I was making red cooked pork, I don't know how the message ended up being for the oxtail video... I am not quite sure what it was but there was a lot of stuff floating in the cooking liquid two hours into cooking the red cooked pork. At the end I poured the whole thing through a sieve and that cleared up the sauce/liquid a bit. Do you know what caused that? And is there any way I can prevent that? thanks!!

  • @schweetheartmonkee There is usually little shreds of meat from the pork that float up - simply b/c it starts to fall apart a bit. I usually just leave them in and thicken the sauce. Also, the garlic and fennel seeds would be in there as well, but other than that I can't think of anything else that would floating on the top :)

  • i am totally going to make this soon! i favorited! Where do u get the best price 4 oxtail n-e-ways? I see it at the local oriental market for like $4.99/ lb. Is it the same there where you live too? What is considered a reasonable price per pound for oxtail?

  • @bigsqueeze76 I'm a bit of a neat freak so I do most of my frying outside simply b/c I don't want the greasy mess inside :)

  • you should buy a chciekn, put in water, boil for 2 hourss, PURE CHICKEN BROTH, the best, way betetr than tinned or canned cuz those have loads of MSG

  • @Darkheroeslord MSG Is really not that terrible, it occurs naturally in a lot of foods. There have been studies that show that even for people who believe they are intolerant, MSG has no effect on them when studied against a placebo. It is harmless to people, even in large amounts.

    And no, I'm not in the pocket of China big-business. Though the way the economy is going, that's the place to be!

  • @elvenlove I know MSG is bad. It is bad for you. Large amounts of consumtions will cause dehydration if your not hydrated. Many foods have it, but for me, I cook with fresh ingrediants, i rarely and seldom go out to eat. MSG if reguarly consumed can cause alot of problems incluidng hair loss. And eventually it will causes your hypothalamus to malfunction and possibly releasing too many ADH which will cause concentrated urine, and many problems as well. Its very bad.

  • @Darkheroeslord Why don't you write a series of letters to the FDA then and demand they make MSG illegal? If MSG did causes those "factual" symptoms, I find it unlikely it would remain legal. Plus, given that the Chinese do in fact consume a great deal of it, if the hypothalamus were to malfunction as a matter of course based on MSG consumption, the entire nation would loose the ability to maintain their body temperature. Is this currently the case? Check your facts before you start spewing fear

  • @elvenlove Omg, Why is your attitude like this lol? Anyone these sytoms are rare and I literally mean a extremely large consumption of it. The reson why its not illegal is mainly due to the fact it does not show harmful effects if takenn in consideration, If you eat it every day with every meal, then obviously that person would be stupid and veyr ill. Plus I myself personally just don't like it, please do not...do not make your words carry knves towards me. :\

  • @Darkheroeslord An extreme amount of anything you consume is bad for you. If you eat a pound of salt in one sitting for instance you die. Please reread your posts to me and see how aggressive you were to my original posting stating that MSG is not the terrible monster that was originally purported by the media, and then tell me my "attitude" is out of line.

  • @elvenlove And the Chinese are only gaining money. Its yourself and your fault if you buy products, not only from China, but places like Tesco you will see Ajinomoto on them, ofcourse, not all are and many are written but not in words, scienctific equations and many people don't recognise them. Even the ingrediants used to made are made with MSG, whcih Ajinomoto claims 33 percent of it is made by them, head ofice in Japan bideaway. I know the risk, i go out to eat sometimes, but not always
